Speculoos tiramisu with strawberries

Ingredients (serves 6) :
  • 500g Mascarpone
  • 5 egg yolks
  • 85g sugar
  • 1 vanilla pod
  • 200g crushed speculoos biscuits
  • 500g strawberries
Tiramisu aux spéculoos et aux fraises
Preparation:

Boil the milk with the vanilla.

Mix the egg yolks and sugar. Delicately stir this mixture into the milk; bring to the boil.

Let the mixture cool in the refrigerator.

Whip the Mascarpone for 1 minute with an electric beater and add to the chilled preparation.

In LUDICO glasses, pile up a layer of strawberries and a layer of cream, and top with speculoos.

Let it set for 3 hours in the refrigerator.
